Candied sugar, or rock candy, is a time-honored favorite among adults and children alike. Not just a tasty treat, it has a long history as a vessel or vehicle for medicinal applications – Shakespeare and Henry IV both referenced rock candy as treatment for a sore throat. This version, made with lavender, incorporates the versatile herb’s many benefits.
- 4 cups granulated sugar, either white or brown
- 1 cup water
- 2 tbsp dried lavender, twigs and all
- 6 Large Mason jars
- 12 Popsicle sticks
How to make it
- Begin by placing sugar, water and lavender into a saucepan. Heat on medium, stirring occasionally to dissolve the sugar.
- Once sugar is completely dissolved, scoop the lavender from the mixture. Remove the pan from the heat, allowing it to cool for a few minutes.
- Pour mixture into Mason jars. Place 2 popsicle stick into jar and clip the tops with a clothespin to hold it in place. Make sure the stick does not touch the bottom or sides of the jar and allow space between the 2 popsicle sticks. If you have a smaller Mason jar, place only one stick in each jar.
- Cover loosely with towel or cling wrap, and move the jar to a cool place.
- Let stand for 48 hours, allowing sugar crystals to adhere to the popsicle stick (more crystals will form the longer it sits). Remove the stick when ready. Note that the top of the mixture may have hardened a bit, so you may need to lightly crack it with a butter knife to free the stick.
